How Are Frozen French Fries made?

23 May, 20251

Frozen fries have a wide consumer base in the global market as a convenient and tasty frozen food. Although its finished product looks simple, behind every single French fry goes through a rigorous process. Below, we take Lonkia's standardized production process as an example of how are frozen french Fries made.

Raw material processing and cutting

First, the french Fries making machine factory selects high-quality potatoes with high starch content and uniform size. Once the potatoes enter the french Fries processing line, they are washed to thoroughly remove sediment and impurities. Next, a peeling machine is used to remove the skin to ensure a clean appearance. The peeled potatoes are then fed into a cutting machine, which precisely cuts them into uniform strips, ensuring that each fry is the same size. Once cut, some factories also use a water flow sorting system to pick out broken or misshapen portions to improve overall quality, and Lonkia offers highly efficient washing, peeling and cutting equipment for high-volume, continuous production.

Rinsing and pre-frying

The cut fries are hot-water rinsed, which removes excess starch, prevents oxidative discoloration, and makes the fries softer. They are then pre-fried in medium temperature oil for a short period of time, the main purpose of which is to set the shape of the fries so that a slightly crispy layer is formed on the surface of the fries. This step determines how crispy the finished fries will be after frying, and is a key step in ensuring the stability of frozen storage.

Freezing and packaging

After pre-frying, the fries are rapidly cooled down by an air cooling system, and then enter the quick-freezing equipment for deep freezing, usually at temperatures below -18°C, to quickly lock in moisture and texture. After freezing, the fries are automatically dispensed into food-grade bags and vacuum-sealed to extend shelf life. Finally, the product undergoes metal detection and quality inspection to ensure that each package of frozen fries is safe, hygienic and of uniform standard before it is shipped out for sale.

The production process of frozen fries reflects the technical level of the food processing industry, and every step is crucial, from the potato to the finished product. As a specialized manufacturer of food processing equipment, Lonkia is committed to providing its customers with high-performance, intelligent solutions that deliver the desired taste and quality in every single French fry.
